BEHIND THE HARVEST
What the Coffee Bag Doesn’t Tell You
A coffee bag may show a variety, process and tasting notes—but it rarely tells you about the changing weather, the cherries that were rejected, the decisions made during fermentation or the people who protected the harvest.
Behind the Harvest
Coffee cherries on the same tree do not ripen at the same time. Careful hand-picking allows producers to select the ripest fruit while leaving the others to mature, directly influencing sweetness, consistency and quality in the cup.
Brew Better
Small changes in grind size, water temperature or brewing time can completely change the same coffee. A finer grind usually increases extraction, while a coarser grind allows water to pass through more easily and produces a lighter cup.
Coffee, Explained
Notes such as chocolate, caramel or berries are not normally added to specialty coffee. They develop naturally through the coffee variety, growing conditions, processing, roasting and the way the coffee is brewed.
Recipes & Rituals
Coffee does not have to be served only hot or with milk. Its natural acidity and sweetness can pair beautifully with fruit, spices, ice and even sparkling water, creating balanced drinks without hiding the character of the coffee.
